Hi Guys :) I hope you're all enjoying the bank holiday and what's left of the summer here in sunny England and if you live in a hotter climate.. I'm jealous!
Ive just started baking again over the summer as I have a bit of spare time on my hands before uni starts and while the boyfriend is away on placement :( My biggest problem with baking is my boyfriend is a chef. Now I can here you say.. "You're so lucky"and "He must cook lovely things for you all the time!" Don't get me wrong I am and he does.. while he's here but it also means that I become very intimidated when it comes to cooking anything for him. I mean just look at what I'm working against..
Oat pastry, baked white chocolate mousse, poached strawberries and crystallised white chocolate.. I know right?! This was whipped up on a Sunday afternoon after I threw him a mystery box challenge (we watch far too much Masterchef) Evidently we have two very different baking styles and my aim is always to make things super easy and versatile and always vegan and gluten free.
So back to my post..I love pancakes! Who doesn't? But being a vegan and gluten free baker I struggle to do anything other than a lemon and sugar crepe which are tasty and I will be sharing them with you in posts to come, but thanks to the wonders of pinterest I found a recipe by Foodie and Fabulous that I adapted to make 100% vegan, gluten free and full of protein.
I bought a humongous pack of soy protein isolate (unflavoured) a while ago.. around the same time I purchased my gym membership which I no longer have, so you can see how well that worked out!
Lately I've been seeing a few recipes for protein pancakes so I thought I'd give it a go.
In the space of two days I have made two different kinds.. banana cinnamon, which was the original recipe, and mixed spice raisin, which I just adapted the flavours from the original. They're both delicious and the raisin is super cute! Unfortunately due to a mishap cooking the banana ones (and me eating most of them..) I haven't got a blog worthy post picture.. oops! In the spirit of sharing my mistakes here's one I managed to take that's a little burnt :(
But I promise to remake them and upload a proper picture including the recipe in another part 2 blog post :)
The great thing about this recipe is it substitutes oatmeal instead of flour and in the ones above uses banana's instead of sugar making it super healthy!
Once you have the basics down you can substitute the flavours around which makes it super versatile. If you give it a go with any flavours I haven't tried let me know :)
Although the raisins add sweetness I did add sweetener although I would love to make these again with applesauce which would go amazing with sultanas and mixed spice! You can also drizzle them with agave after instead of adding sweetener.
Trying to put the raisins on in an artistic pattern was my downfall although there are some hideously attempted ones underneath the heart. The thing I love about this is you can literally do what ever design you choose and use whatever fruits you want. I think these would be perfect for valentines day and since that's my one year anniversary I hope the boyfriend likes them!
Ingredients:
- 250 grams gluten free oats
- 2tsp mixed spice
- 1.5 tsp vanilla
- pinch of salt
- sweetener to taste
- 2tsp vanilla
- 400ml dairy free milk
- 1 scoop of protein powder
Directions:
In a blender add the oats, baking powder, salt, mixed spice and sweetener. Blend together until it resembles flour. Next add the milk and vanilla and blend until smooth.
Add the protein powder and blend, this is were the mixture will begin to rapidly thicken, add more milk if necessary.
The mixture should be slightly thick like custard. Pour straight from the blender into a hot pan. You can oil the pan first using butter (dairy free of course) or vegetable or coconut oil but I have an amazing new stoneware pan and it doesn't need any greasing!
Whilst the one side is cooking add the raisins on top, you can add these in any shape you choose depending on how creative you're feeling!
Cook on both sides until golden brown and enjoy!
This mixture should make around 5 pancakes.
